SALT: Experience new Nordic cuisine from the Baltic Sea to Hamilton

On Friday, 26 October 2018 join us for the rare opportunity to sample new Nordic cuisine from Restaurateur Tiina Truemann and Chef Vladimir Proskurnin from SALT restaurant in Tallinn, Estonia.  They are excited to partner with Hamilton’s Diplomat restaurant to showcase a multi-course tasting experience of exquisite new Nordic cuisine at the Cotton Factory, Hamilton.  Tiina’s influences will be explained in word, song, dance, photographs and video.

Join us to experience new Nordic cuisine from SALT restaurant (https://saltrestoran.ee/meist/) in Tallinn, Estonia and celebrate the Nordic culture that inspired it.  New Nordic cuisine re-imagines traditional local dishes from Scandinavia with fresh, local, ethical, sustainable and seasonal ingredients prepared in innovative ways.  This involved reviving some of the traditional techniques, such as smoking, marinating and salting.

Tiina has travelled the world to find new influences and culinary traditions.  This is all brought back to Tallinn, Estonia on the shores of the Baltic Sea, where she creates her ‘extreme fusion’ variations on traditional Nordic fare.  This has become a trademark of the ever-evolving Salt menu.

Tiina will be accompanied by SALT’s chef Vladimir Proskurnin, sous-chef Marko Kaljend and sommelier Nikolai Tsherkassov, who will all share in this visit; meet local chefs; sample the Hamilton food explosion and local vintners and brewers.

Tiina’s influences will explained by her; illustrated by internationally acclaimed artist Peeter Laurits (http://www.peeterlaurits.com/en), who will curate and discuss his images; sung by local artist, Tor Lukasik-Foss (http://torlukasikfoss.ca/), who will have just returned from an artist residency in Estonia; and brought to life by Form Contemporary Dance Theatre (http://www.formcdt.ca/) to the music of Trad.Attack!
